Roasted Citrus Turkey Breast from Curb Your Cravings




It's almost Thanksgiving and I smell TURKEY!!! Turkey is lean and delicious and, well, I don't know about you but it's one of those things I just crave time after time. You don't have to be a master chef to make this delicious meal. Give it a try! And when you do, come back and tell me how you liked it!

Roasted Citrus Turkey Breast from Curb Your Cravings


Prep Time: 15 min Cook Time: 2 hr Servings: 4

INGREDIENTS:

¼ tsp Paprika
2 Oranges
1 Lemon
½ tsp Ground sage
½ tsp Fresh rosemary
½ tsp Black pepper
1lb Turkey breast
1 tsp Parsley - fresh sprigs
½ tsp Fresh thyme, chopped

INSTRUCTIONS

Start with a thawed turkey breast; rinse and pat with a paper towel so that it is still slightly moist.

Preheat oven to 325°F.

Finely chop the herbs: parsley, sage, rosemary & thyme and combine them in a medium-sized bowl.

Grate the lemon and orange peels, combining the zest with the herbs; be careful to avoid including the pith. Add paprika and a twist of freshly ground peppercorns. Mix well.

Cut each fruit in half.

Set the turkey breast on a raised rack in a roasting pan and squeeze the lemon and oranges so that the juice coats the turkey. Sprinkle the herbs over the breast, coating it as well as possible. Pat some on the underside as well, if you can.

Basting regularly with its own juices, roast the turkey uncovered for about two hours, or until the internal temperature reaches 170°F. Discard the skin before serving.

Tip: About halfway through, cover loosely with foil to avoid drying out the turkey.

This is elegant and a delightful change from just traditional poultry seasoned turkey!! Last Friday morn I was doing my grocery shopping and at the meat counter I noted that the store had put "managers special" stickers on LOTS of turkey parts including whole breast and breast cutlets. I got a breast for about $4 and the cutlets were $1.50 package of 4 (2/lbs about) anyway I made this yesterday for a weekend meal and omgosh talk about melt in your mouth!!! Whoever developed this receipe THANK YOU----mmmmm good!!
